Cranberry Relish

Thanksgiving and Christmas wouldn't be the same without cranberry relish. Here is a quick and easy recipe that is made primarily from fresh fruits. This is a great recipe to get your kids to help you on. Make it a family tradition to make the holiday cranberry relish.

Ingredients
2 cups     Or 1 package of fresh cranberries, washed and sorted
1            Fresh orange
1            Fresh, crisp apple
1 Tbsp    Grated orange peel
1/8 cup   Sugar (or more depending on how sweet you like it)
1/4 cup   Coarsely chopped pecan nuts
 

Directions
Rinse the fresh cranberries and remove any that are not solid and good. Core and chop the apple in big chunks. Grate a tablespoon or more of fresh orange peel. Then peel the orange and divide into sections. In a food chopper (or blender) put in a cup of cranberries, half of the fresh orange sections, and half of the chopped apples. Chop to a medium fine consistency (don't make it too fine or it turns into mush). If using a blender and you need a little liquid, put in a small amount of fresh orange juice. When finished, dump into a bowl and repeat with the rest of the cranberries, apples, and oranges. Dump into the bowl.

Finally stir in the orange peel and sugar. Taste to see if it is sweet enough or if it needs more sugar. If needed, add more sugar to meet your taste. I like it a little tart, others like it sweeter. With the apple and orange, it doesn't require too much sugar. Put it in the fridge to chill before serving. Setting in the fridge overnight seems to make it even better. Stir in the chopped pecans just before serving. Serve in a pretty bowl. You can garnish it with mint leaves or simple put a few pecan halves on top. Enjoy!
